Admittedly a menu ought to delight the most demanding of taste buds, but for those who would like some direction, we suggest the bass with tartare of ginger and fine herbs, served with a lightly whipped, pepper sauce and salad and pan tossed almond spaghetti. Also, the monkfish in coconut milk and lime and the roasted seabass with gnocchi, baby spinach and pan seared tomatoes, with an orange and sechuan pepper sauce. To finish, why not be enchanted by the moelleux chocolat100% crème fouettéeamaretto et fève tonka before heading to the edge of the swimming pool, in the shade of the palm trees. Maybe, this is how the true VIPs spend their 'tropézienne' holidays...
