Alain Senderens knows what luxury is. Moreover, at 65 years of age, he has had the luxury to hand back his three stars from the famous Guide Rouge, after having lived with them for 28 successive years ... But if he knows luxury, has sought it, practiced it, cooked it and served it for so many years, he remains in control of himself. It is without doubt this knowledge which represents the supreme luxury nowadays.

It resides in the word itself: excess. If we refer to its Latin origin, we find "light", perhaps, but especially with "luxus": excess. One falls easily into excess, the fake taste, disproportion, etc. I believe that it is Brummel who said that true distinction is discretion...
