If human beings spend most of their time struggling against the decline caused by time and delaying the unavoidable, champagne, on the contrary, accommodates it with a long stay in the cellar, even if it means postponing when it is drunk. At Dom Pérignon, to make "the best wine in the world", they leave it for a supplementary maturation period after its first 7 years spend in the cellars. Certain bottles will be then tasted whilst others, the lucky few, will return to the cellar for no less than 12-16 years to reach a second richness, marked evidently by an exceptional intensity. Thus is created the Dom Pérignon Oenothèque, the bottle will enter into prosperity, at least until it is imbibed...

After 13 years spent in the cellar, having passed though a complete series of metamorphoses, today the Dom Pérignon Oenothèque 1993 enters into the legends of exceptional vintages. However without a doubt, this derivative of the Dom Pérignon 1993 is different from the one presented in 2000. Cleaner, more coloured, gentler, more delicate, denser in aroma and fuller on the palette, Dom Pérignon Oenothèque 1993 intrigues by its youthful-maturity, by its hints of grapefruit, cherry plums and dried fruits. Undeniably, subtler and more extraordinary, the vintage merits entering into the Champagne hall of fame. Worth a knighthood!
