Taking root in the culinary tradition does not exclude the use of new technologies, which open the door to contemporary interpretations. At the base are products that go with the seasons and which come from meticulously selected producers. This restaurant, the 39V, is a discovery for gourmets, looking for novelty and variety without sacrificing classicism. From an organic poached egg to blue lobster and macaroni with Comté cheese. As well as delicious desserts like a gâche vendéenne – French toast style or milk jam ice cream. The wine cellar offers a great selection of wines and champagnes available by the glass and carafe.

The restaurant is located on the 6th, and last floor, of a Haussmann-style building, overlooking a courtyard with a capacity limited to 50 places, which makes the restaurant an intimate place, quite rare in this neighbourhood. The interior is signed Marcelo Joulia, creator of the Naço Architectures agency, who has given this place its own particular style, with its huge windows offering a panorama of the rooftops of Paris and its open cuisine on the other side of the courtyard to witness the talented chef at work. The 39V restaurant is a successful mix of gastronomic excellence and a refined ambiance for a very pleasant parenthesis. Congratulations, Mr Vardon!
